For the past couple of days, I've been experimenting with different combinations for this sandwich. Free-range eggs are in plentiful supply, as is Gluten Free bread for Maureen and I, so a fancy egg sandwich is a logical choice.
Ingredients:
-Two slices of bread (of any variety, GF or no)
-Two free-range, organic eggs
-Homemade or purchased Tzatziki sauce (Greek yogurt sauce: see a good recipe here.)
-Butter or olive oil
-3 thin slices of Halloumi cheese
-Mixed greens/spinach (I chose an aromatic variety with cilantro and parsley...basil is also good)
-Salt and Pepper
1) Toast your bread until golden brown. Spread both pieces of toasted bread with a generous layer of tzatziki sauce, then layer on the lettuce and fresh herbs.
2) In a large sauce pan, fry your two eggs and your slices of cheese in olive oil or butter, until eggs are done and cheese is golden brown. Salt and pepper the eggs (but not the cheese, as it's already quite salty!)
3) Layer on to your prepared bread and you're good to go.
